Well, I probably should have taken a gravity reading BEFORE the transfer.  I racked the IPA into my secondary carboy and added 2oz of Centennial hop pellets.  Taking a gravity reading then, I got 1.017.  My target was 1.010, so I should have just let it sit a while longer.  Still, the hydrometer sample was very tasty.  A bit overly bitter, perhaps, but that will mellow somewhat in time, and should be offset by the aroma hops.

Finally my IPA started fermenting after 36 hours or so. I really need to make a starter on these big beers (it did start at 1.074, you know). I always start to worry when I get a >24hr lag time.

I’ll probably have another of my Brown Ales tonight, despite only bottling 5 days ago. I had one (flat) that first night, and another (mostly flat) a couple days later. It’s just so damned tasty that I couldn’t resist.

This was a busy weekend! On Saturday (the 11th), I bottled the Brown Ale. The hydrometer sample (1.016) was simply phenomenal! I did all the work in the basement this time, so no schlepping equipment up and down the stairs. Seemed to work out pretty well. I ended up with 51 12oz bottles, and I even drank one later that night (uncarbonated!) cause it was just so damn good. Oh, added ~1/4 oz of hazelnut extract to the bottling bucket.
